Preheat oven to 425 degrees.
Remove ends of carrot and zucchini and cut into sticks.
Combine all Carrot & Zucchini dry ingredients in bowl and mix.
Whisk 2 eggs in separate bowl for egg wash.
Take carrots and zucchini sticks and roll in egg wash and then panko mix before lining up on a parchment paper covered baking sheet
Bake in oven at 425 degrees Fahrenheit 20-25 minutes.
Serve warm with side of spicy peanut sauce.
