Creamy Chipotle Sweet Potato Pasta

For the Sauce:
 4 tsp minced garlic in water OR 8 garlic cloves, minced​
 2 large onions, small diced​
 2 tbsp olive oil​
 ¼ cup lime juice​
 ½ -1 cup water (optional)​
For 1 serving of pasta dish: ​
 ½ cup Veggie Chorizo Meal Starter​
 1 cup Creamy Chipotle Sweet Potato Sauce​
 ¼ cup water​
 Chopped parsley and shredded parmesan for garnish​
For the Sauce:

Heat sweet potatoes by the desired method- in simmering water/bain marie, steamer, etc.

Cook onions in oil until golden brown, stirring frequently and season with salt. Add garlic.  Cook about 1 minute longer until garlic is golden.

Transfer onions and garlic to a blender pitcher followed by sweet potatoes, coconut milk, lime juice, hot sauce, salt & pepper.

Blend on high speed, scraping down sides as needed.  May need to blend in batches.

Add water a little at a time until it reaches desired consistency.

Pour sauce into containers to chill until ready to use.

Directions for 1 serving of Pasta dish:​

Heat a medium-sized saute pan with light coat of oil (or pan spray).  Add Chorizo and cook until lightly browned and crispy.

Add sauce and water and stir well.

Add pasta and continue to cook until pasta and sauce are heated through.

Plate and garnish with parsley and parmesan.

**Note: Dish can also be assembled and microwaved to heat through.​
