Bacon Wrapped Goat Cheese Stuffed Dates​

For the goat cheese filling:​
 4 tbsp honey​
 ¼ cup fresh rosemary, chopped​
 ¾ cup olive oil​
  cup water​
 1 ½ tsp Kosher salt​
Other Prep:​​
To assemble one portion of dates:​​
 3 Medjool Dates, pitted and kept whole​​
 3 oz goat cheese mixture​​
 3 pieces of parcooked bacon​​
 2 tbsp Hot honey​
 1 tbsp Olive Oil​​
Directions for the goat cheese filling:​

Combine ingredients in bowl of food processor and process until smooth, scraping down the sides as needed.

Store in containers until ready to use.

Other Prep:​​

2 ¼ lbs applewood smoked bacon, pieces cut into halves and par cooked 

Directions to assemble one portion of dates:​​

Using a piping bag, pipe approximately 1 oz. into each date, filling it, but making sure it does not run out.

Wrap each date with a piece of the bacon.  Secure with skewer.

Bake or broil dates until bacon is cooked and goat cheese has softened, being careful not to let the goat cheese run out of dates.

Once dates are baked, carefully remove from skewers.  Can be placed on small forks to serve.

  • Plate dates on serving dish and top with relish, honey, olive oil, and fresh cracked black pepper.
*Note: Batches of dates should be made and chilled in advance so they can be pulled and cooked to order.​​
