At the Affinity Group Fall Leadership Summit, Cathy Holley of Flavor & The Menu presented the Six Trends to Watch in 2022.

2022 will be all about blending comfort with creativity. During this era of uncertainty, restless consumers are craving adventure, yet still seeking the comfort of foods that remind them of happier times. Foods that feature a blend of both are expected to be the key trends of the coming year.

TOP FOOD TRENDS AND FLAVOR FADS TO LOOK FORWARD TO IN 2022

Salt

Embracing the nuance of salt is an opportunity to move away from sweet-based flavor profiles that many have overindulged in throughout the past year. Transforming your favorite foods with salt is a simple trend that will see huge growth in 2022. By simply selecting and using the right salt in the right way, consumers can vastly improve nearly any dish. Salt goes beyond mere flavor, it’s also an important textural element in just about any dish and offers the opportunity to raise the visual appeal of your presentation.

Remember that a charcuterie board can be tailored to any occasion which offers you unlimited potential for creativity.

BOCADILLOS

The Bocadillo offers both a taste of adventure and a connection to the familiar. The traditional Spanish Bocadillo is a type of sandwich served on a baguette, though it’s different than what you may think of when you hear the word sandwich. A Bocadillo is often filled with trending ingredients such as Spanish chorizo sausage, cold cuts, tuna or Serrano ham.

MEXICAN COMFORT

Mexican food found mainstream acceptance in the United States decades ago, and as its popularity continues to grow, consumers are becoming more adventurous with their food choices. They now seek authentic dishes beyond just the familiar tacos and burritos. For example, more modern Mexican comfort foods such as birria, taquitos and quesadillas have seen a huge rise. A leading opportunity for Mexican comfort foods can also be found in the breakfast and brunch space with elevated takes on traditional favorites like chilaquiles and huevos rancheros.

COLD COFFEE

Cold coffee has become a hot commodity. With its rise in popularity, especially among younger consumers as their go-to drink, many have projected that cold coffee will replace hot coffee as the generational drink of choice. With a mellower, more balanced flavor, cold coffee offers a broad appeal that’s perfect as a traditional breakfast drink, during lunch and dinner, or even as part of a cocktail during happy hour.

TIP: Cold brew coffee made from a dark roast can often pair perfectly with nutty pastries or dark chocolate.
