Apple Pie French Toast

Muffin Batter
 3 cups Raisin Bran Cereal
 3 cups Kashi Cereal
 3 cups Bananas (could use IQF)
Apple Topping
 4 oz Butter
 6 cups Apples (Sliced fresh or IQF)
 1 cup granulate sugar
 1 tsp ground cinnamon
French Toast Batter
 ¼ cup Orange Juice
 10 eggs cracked and mixed
 2 cups whole milk
 2 tbsp granulated sugar
 1 tbsp Ground Cinnamon

Oven on 350 degrees

Place Muffin batter in large mixing bowl - add into the bowl the Raisin Bran and Kashi Cereals and the bananas. Mixed very thoroughly to mash in Bananas and cereals. Set aside.

Prepare 3 Loaf pans (1/3 pans) with a little nonstick spray. Split the muffin mixture between all loaf pans evenly. Top each loaf pan with 1 cup of the Streusel topping all over.

Bake the muffin batter loaf pan in the oven for 40 minutes – or till done (check with toothpick). They should be completely cooked through. (up to this point you should do this day prior to serving)

Place apple slices into cooking pot on stove, medium heat – place in the butter to melt then add the sliced apples. Sprinkle in the 1 cup of sugar and 1 tsp of cinnamon and mix well. Let the Apples cook for approx. 10 minutes till cooked and glazed – set aside in warm place.

Prepare French toast batter – Take a medium bowl and add in Orange Juice and 10 cracked eggs, 2 cup milk, 1 Tbsp cinnamon and 2 Tbsp sugar – mix well and set aside.

When the Muffin batter loaf pans are at room temperature or cooled from overnight – slice 1 inch thick full pieces.

Griddle on 350 degrees. Take the slices and dip them briefly into the French toast batter on both side – place onto griddle – cook each side for 2 minutes.

Place warm apples ¼ cups ontop of slices. Additional sprinkle of Kashi to complete if you wish.

Serve with vegan sausage patty, additional fruit, berries, and maple syrup.
