Coconut Raspberry Pancakes

 2 cups cold whole milk
 ½ cup water
 1 cup complete pancake mix
 Vegetable oil
 ¾ cup fresh raspberries
 Powdered sugar

Pour milk into the bowl of an electric mixer; add Coconut Flavored Cream Dessert Filling Mix – Artificially Flavored. Using the whisk attachment, mix on low speed for 1 minute. Turn off and scrape sides. Continue mixing on high speed for 3 to 4 minutes or until firm.

Whisk 1 ½ cups Coconut Flavored Cream Dessert Filling Mix, water and pancake mix until combined (batter will be lumpy).

On a preheated griddle coated with some vegetable oil, portion out a scant ½ cup batter for each pancake; cook until bubbles form and the edges are dry, about 2 to 3 minutes. Flip and cook until browned on the other side. Repeat with remaining batter.

To serve: Place 3 pancakes on a platter. Place a large dollop (about ½ cup) Coconut Flavored Cream Dessert Filling Mix on top and drizzle with Raspberry dessert topping. Cover with ¼ cup raspberries and a dusting of powdered sugar.
