Slice French bread and leave out to stale. Preferably over night
Pre heat oven to 400 degrees. place eggs, milk, brown sugar and Banana pie mix in a bowl and whip until well mixed and lump free.
Place bread slices in a pan in single layer and pour banana egg mix over making sure to coat bread thoroughly. Let soak 5 -7 minutes turning bread halfway through.
Heat a lightly oiled griddle or lightly oiled non-stick pan over medium to med high heat.
Place soaked bread slices on griddle/in pan and cook until golden brown, then flip and cook other side until golden.
Place bread on baking tray and place in preheated oven for 5-7 minutes until egg is cooked through. Bread may start to “puff” a little when ready.
Arrange 3 slices on a plate per serving and sprinkle with toasted pecans, garnish with sliced bananas, top with whipped topping, and drizzle with caramel sauce.
