In a steamer or large pot, heat the bag of White Cheddar mac and cheese for 15 minutes.
Cut red onion into small dice.
In a sauté pan, add a little oil and cook chorizo for about 5 minutes. Add red onion and cook another 5 minutes.
Cut Red Bell Pepper into small dice.
In a large bowl, add mac and cheese, chorizo, onion, bell peppers and corn together and mix.
Add in green chilies and hot sauce and mix.
Cut Serrano and jalapeno peppers into thin rings for garnish.
Cut green onions.
Plate Mac and Cheese and garnish with hot pepper rings, green onion and cilantro.
