Prepare the Filling: In a large mixing bowl, combine the lobster, prepared White Cheddar Mac & Cheese, shredded mozzarella, breadcrumbs, and seasonings. Mix until the mixture holds together easily.

Form the Croquettes: Scoop about 2 tablespoons of the mixture and shape into balls or logs. Place on a parchment-lined tray and freeze for 30–45 minutes, until firm.

Bread the Croquettes: Dredge each croquette in flour, dip in beaten egg, and coat with breadcrumbs. Ensure each croquette is evenly coated for a crispy exterior.

Fry Until Golden: Heat oil in a deep pan or fryer to 350°F (175°C). Fry croquettes in batches for 2–3 minutes per side, until golden brown and crispy. Remove and drain on paper towels.

Serve: Serve hot with dipping sauces like garlic citrus aioli, spicy mayo, or a drizzle of hot honey.
