Mushroom Scallops over Potatoes with Chipotle Strawberries

 3 Trumpet mushrooms, large
 1 tsp Old bay seasoning
 1 oz Butter
 2 qts Mashed potatoes
 4 tbsp Minced chives
 ¼ cup Crumbled feta cheese
 3 oz Chipotle hot sauce
 1 cup Strawberries, diced

Cut trumpet mushrooms into large coins about 1- 2 inches wide.

Sprinkle with Old Bay for that “seafood” flavor

Cook in sautee pan about 3-4 minutes on a side until soft.

Heat Mashed potatoes accordingly and mix in chives and feta cheese.

Mix strawberries and cholula together and let sit for 5 min.

Plate in whatever style suits you.
