Overnight Steel Cut Oats Fruit Parfait

Overnight Mix
 8 cups Yogurt Greek
 4 cups Whole milk
 ½ cup Brown sugar
 1 tbsp Salt
For Layering
 4 cups Dragon Fruit/Tropical Fruit/Berries – Any Fruit fresh or IQF (defrosted)
 4 cups Raisin Bran Cereal
 Clear cups for portioning and lids if using
Additonal Toppings
 Mallo Crème or Whipped topping
 Grain Crumbles
 Chia Seeds or Flax Seeds

Prepare the overnight oats – in a medium size bowl or container place the Steel cut Oats, Greek Yogurt, whole milk, brown sugar and salt – stir all to combine thoroughly. Wrap or cover and store in the cooler for 18 hours.

Next day remove the Overnight Oat container – and with a large spoon stir the mixture – taste for seasoning and add additional salt and pepper as needed.

Place the clear plastic cups on a table with all of the toppings to start putting the Parfaits together.

In the plastic cup place a ¼ cup of the Raisin Bran cereal in the bottom of cup then top that with a ¼ cup of your fruit of choice.

Next layer in the cup place ½ cup of the Overnight Oats.

Add another fruit layer ¼ cup.

Top with ¼ cups of the Mango Smoothie or another pureed fruit mixture.

You may garnish with a sprinkle of more Raisin Bran (daily) as well as if you might have some Whipped topping.

These cups will be good for 3 to 4 days
