Vegan Chorizo Dirty Rice in Roasted Red Bell Pepper Sauce Recipe

Rice
 1 cup Onions, fine dice
 1 cup Celery, fine dice
 1 cup Green pepper, fine dice
 ½ cup Olive Oil
 3 qts Water
 9 cups Vegan Chorizo
Roasted Pepper Sauce
 4 Red bell peppers, large
 ½ cup Roasted garlic cloves
Garnish
 1 cup Matchstick carrots
 1 cup Matchstick zucchini
 1 cup Matchstick squash
 1 cup Matchstick leeks
 2 cups breading
 28 Lattice Potato Chips
Rice

Sweat the onions, celery and peppers in olive oil in gallon pot.

Add water and Dirty Rice mix, cover and bring to boil. Reduce flame and simmer 40 minutes until water absorbed, rice is done.

Fold in Chorizo and mix. Keep warm in steam table or heat to order.

Sauce

Prepare Vegan White Sauce according to package instructions. Reserve 2 cups and refrigerate the rest for future use.

Halve and roast Peppers over open flame until charred black evenly. Place in a plastic bag to steam. Peel off skin.

Place Peppers, Roasted Garlic and Vegan White Sauce in blender and puree until smooth. Reserve warm.

Pack Chorizo Dirty Rice in ring mold. And remove mold. Ladel sauce around rice.

Sautee the matchstick carrots, zucchini and yellow squash. Season with salt and pepper. Moisten matchstick leeks with water and toss in Drakes breader. Deep fry 1 minute.

Top molded rice with vegetable and leeks. Garnish with lattice potato crisp garnish.
